Esther van Leeuwe, owner of Smaak van de Waard (Taste of the Innkeeper), is a Chef who operates a catering company that uses only regional products from the Rotterdam region. Esther describes herself as a real Burgundian. And, contrary to what people think, she says this goes well with a sustainable food chain. It is her mission to inspire others to reduce food waste as much as possible in their lives.
Smaak van de Waard prefers to work with small local suppliers who consider
sustainability to be of paramount importance. They work slightly differently than
many other caterers in order to produce as much sustainably as possible. They
have managed to have only 1.6% waste, compared to the 30% waste that is
customary in catering industries.
Esther will be sharing her story and mission at the February General Meeting along with providing a catered lunch following the meeting.
